Not the greatest lover of folding knives but if you can refrain from using them for everything you might a fixed blade the Fallkniven PXL 3G Laminate must be a contender for the finest off the shelf offering under £300. See it as the "Rolex Submariner" of production folders and proberbly the sharpest too:

Easy to chose for me its a basic buck 110.sharpens easy keeps a good edge,always got mine lying about somewhere.
 
This week it's a buck paradigm avid pro,
last week it was a benchmade melardue, axis lock
next week ? It's horrible being a knife nut always looking for your next fix

Every year I head to Bisley's Phoenix (as just one example) with good intention and every year I spend far, far more time at the knife stands than any other with trembling Viza Card in hand! This time it was nearly a large vintage bowie. Like I need one!

K, I no what you mean, I looked at a couple of knives at Phoenix , a lovely s African fixed blade and of course the obligatory Randal, but managed to keep my wallet away until this week when I bought a pair of Backwood customs, if only I had more will power.
 
Original plain edge Spyderco Delicia, had it for years and has always served me well.
These days in the drawer unused thanks to our stupid laws, now I carry a cheap Spyderco non locker :cry:
