If you are going to book with a traditional estate there won't be any "wiggle" room on the price. If you don't want to pay the asking price they will sell it the next day to someone else.
It all depends on the Estate you are talking to. Some Estates will be thick with stags in September, some won't see stags in any number until October.
As for the quality of stalking... That depends on your stalker. Some will line you up on a stag before 1pm and you'll be back in the lodge for...
Top tip, if you can’t reach it then get a bit of fence wire the correct length and put a 1cm 90* bend in it. Stick the bent end in to the fox fur and start twisting, it’ll grab the fox and you can pull it up/out.
