21 day aged meat

The best beef I've tasted was an angus rib that was 21 days old when I bought it, planned to eat it boxing day but didn't get round to it until new years day, it was over 28 days old and bloody delicious.

I've only had good results with red hinds hung in their jackets in a barn for 3 weeks in the period November to January in East Lancs. Yum.
