They're all lovely but I particularly enjoy muntjac (if only they were bigger, lol)

saying that, I have never tried Sika or Chinese water deer....

Ive grassed CWD, Red, roe and muntjac, but the CWD came out tops on my taste buds,

fingers crossed ill grass a fallow in a few weeks,

Never tried CWD but for me it goes Muntie Roe Fallow

That said Branksum stakes (sort of T bone across the spine) on Fallow are eppic but considering all other cuts the Muntie is the best

Well I guess it all depends on taste. I have eaten Red, Sika, Fallow, Roe and Muntjac, all shot by myself and I prefer the ones with slightly coarser meat, excluding Red! I think the best is Sika, then Fallow, then Roe which is what I have mostly on my permission. I shoot quite a few Muntjac and normally give away the meat because I don't rate it at all! I know this goes against many opinions but it's all down to personal taste I guess. We tend to braise most larger joints but NOT the loin meat which is flash fried.

For me it's elk, deer, and antelope, in that order. I have heard that moose and caribou are the best, have never had the chance to try them. Perhaps a Canadian member could render an opinion. On a side note, I have had bobcat and cougar, white meat and it was pretty good, very tender. It smelled really strange when cooking, but it was good meat.
 
Only ever eaten red, roe, sika, boar and goat. I couldn't select a specie speficly as I prefer certain cuts over from each specie.
