Any good?
 
Yes that Venison Sausage book is pretty good, been making the Bratwurst recipe since last year and the Spanish inspired Chorizo version with a lot of spice and paprika goes brilliantly on the grill then into some crusty French bread although I do add a bit of minced pork belly to make them juicier. Recommended.

I'm thinking the chorizo sounds interesting, I also fancy a go at venison and red wine sausage. I have all the equipment and ingredients I just need some time!
 
The art of venison sausage making book arrived at the office yesterday so I'm just having a flick through. it covers making the sausages, drying and storage and there's a few meal recipes at the back. Its a thin booklet of about 80 pages and I'd describe it in style like an old school booklet (well when I was a School anyway!). its obviously written by three American guys so the recipes contain ounces and cups but it seems very thorough and there's 31 styles of sausages referenced complete with recipes. Its the first specific sausage recipe book I've ordered so haven't got anything else to reference it against but I'm pleased with it and will certainly try some of the recipes out.
