If you've never made your own butter, I can heartily recommend it!

1 litre of double cream gives 1lb of butter, and over a 1/2 pint of beautiful buttermilk. I like the Jersey double cream best. It gives a beautifully rich and creamy result.

If you've not got a churn, a food processor will work at a pinch. I like the churn though, although it's a bit more work.

How do you make the pannacotta ?
its from Felicity Cloake I found it on the Guardian online ( I'd like at this point to state categorically that I don't read the Guardian! :)) its without doubt the best panna cotta recipe I've found, the flavour is excellent and its not too firm which I like.
