Dedicated skinning area

Following a discussion about improving my skinning area during my last inspection a week or so ago, I found myself in possession of a load of white cladding board after my wife decided to change her craft room about.

I was wondering what I could do with it, when inspiration struck!

Still a work in progress but I'm very pleased with it, and it'll be a sight better than bare concrete and wood. And it keeps it out of landfill 🙂

Was this after an inspection? I’m helping manage the deer on a farm with a cafe. The cafe is obviously cleared as a food business and there is a good chiller that would pass inspection, but I need to figure a suitable area for skimming and jointing before transferring to the cafe kitchen. The chiller is in a big old barn, but it’s pretty grubby and busy, so a closed off area might be the solution. Will watch your progress with interest.

It was. My practices have already been passed off as suitable on my last couple of inspections, but I'm always happy to take advice and this new inspector really knew his stuff. He came up with a couple of ideas that I was happy to embrace, despite him stressing it was only advice.

Doesn't need it. It's purely for skinning. In any case, there's a drip tray under it. Thanks for your encouragement though 😆
OK. I guess it's down to my poor interpretation of a skinning facility. I hadn't appreciated you've a separate area for removing all the beast's internals, or do you open them up and remove everything along with the head when in-the-field?

Finished it off this evening. Despite assurances that it wasn't strictly necessary, I'm pretty happy that I took his advice onboard. It just adds an extra level of professionalism, I think?

Tidy job there, looks good 👍

I purchased a secondhand chiller a couple of weeks ago so just in the process of reassembling it. Doesnt help that my barn floor was laid in the absence of a spirit level...not by me I hasten to add...so had to build a plinth to get the base level.

Yep. Everything gets left behind, more or less. If I want the heart and liver they get bagged while gralloching and chilled separately 👍
I do exactly the same. I also do keep all offal in bags, the only variation is sometimes I suspend and others I don’t.
