I got a combo deal on at the time..... a mora semi flex boning knife which has a ribbed rubber handle and just “feels” great in the hand...so much so I contacted rob & Jessica at Monarch and bought another couple......and the other part of combo deal was a bone saw...

If you are going to branch out and buy whole lambs/pigs for the freezer as well as deer, I would have a boning knife, big knife, cleaver and a bone saw plus a decent chopping board so as not to mark the kitchen work surfaces, risking the other half's fury.
 
Just picked up this rear end coreing tool for £5.00 inc VAT from the guys who service my Land-Rover. Dread to think what the makeup of steel is but having given it a few minutes on a Japanese water stone I will give it a go on the next fallow. The bonus is it's in matching yellow!

Could try TKMaxx they usually have a very good selection of knives at very affordable prices (as long as you don't mind if they don't necessarily match)
 
Thanks guys, I just went down the cheapo 6' boning knife (less than a tenner), steel and chopping board combo and got offered some other bits by a member. Now just got to actually get myself a deer to butcher! Really appreciate the feedback, thanks.
 
Not much tbh.

I bought a home Larder saw from Rob at Monarch along with a cleaver and roeing knife. In hindsight I should have added a 5 inch semi flexible boning knife.

The roeing knife worked well on the skinning. The saw was good for removing the neck and taking the ribs off the spine. And was a big step up from the old mitre saw I used to use.The clever was good for chopping the bones for stock. Top tip though. Don't use a standard plastic kitchen chopping board. I now have two smaller pieces!! Rob also threw in some other bits for free and posted in pretty good time so I could get on with butchering. Plus a SD discount was applied.

Next step up is a better mincer than the one attached to the Kitchen Aid and a better sausage machine. Don't forget you can use them to make normal sausages, not just the sexy venison ones. Good time to stock up on pork and belly is the closing hour just before a bank holiday at a supermarket. Aldi seems do do a standard 50% at that time.
