Fallow buck venison

Any rutty smell is mostly on the skin and if skinned fairly promptly (couple of days) then in my experience nobody notices once the meat is served up. But, an old buck is an old buck and best stewed or minced.

I’d also rather shoot a pricket or a doe.
 
I normally don’t shoot bucks at all around the rusty but had to take a big Buck this one as he had his heart set on trashing every fruit tree in a small orchard . I took the loins off and minced everything else thinking if the meat was to bad I would just use it for dog food , fourth meal in there’s no difference in the mince taste as any other time of your which is a bonus
 
Just an update on the stinky buck I shot a couple of weeks back. I appreciate that this is not as accurate on taste as we have only had burgers and sausages so far...but all good.

I also decided to give a free pack of 6 sausages of the 2 different batches to anyone at work who would want to try them and got a few takers. 2 have tried them so far and love them and one of the guys wants a load more. Good to get some more people eating venison 👍
