All i can say is Tim is very safety conscious when you are cutting.
He will stop you and show you a way as not to cut or hurt yourself.
Plus he will point out ways of doing things.
He as the charm of a builder but will let you know
All I can say I had a great time with him and learnt so much.
And now feel a lot safer with my knife work 👍

I'm sure Tim is safe.
I came to my ideas on safe practices when I stupidly rushed and cut my self and put my self out of work for a few months. (I'm self employed so it was difficult to earn nothing)
So since then I've asked lots of contractors in the deer world (I'm lucky I deal with a lot of them) what accidents had they had or known to happen to others in are business. I noted certain accidents were more common and those needed looking at.
So I implemented small changes.
 
I'm not saying the way you cut the legs off is wrong. I just teach the guys that shoot for me to put the knife down before twisting the leg off.

I also don't like using a knife for splitting the rib cage because of the force that is needed. With force if something slips or goes wrong things can go wrong big time.
That was a tripe knife Pete and I was not showing how to cut legs off, don't confuse force with a skill set, as we all know a sharp knife cuts much better than a blunt one!
Over many years I have seen people teach/showing people "one way" the classic was a Confined Space course 1/2
as we were sub contracted to Thames Water.
Great course over 2 days spoilt by a "my way" instructor who kicked off in the CPR/Recovery section as 4 of us as divers had just completed a first aid up date course the week before which included supporting the neck when putting a victim in the recovery position. I went first and did per the up date not his demo, he kicked off as I didn't do as he showed.
Never got any change from me, Lee did the same then Stu and Mark.
I asked him had he been teaching the same way from Day 1 (25years ago) Yes he had not changed.
Got our certs despite him grizzling.
The morale of the story is to work safely and not fear the knife just know what you are doing and where it is.
