Done correctly you don’t need to cut hard into bone and blunt your knife. Same with head removal. Good advice above and Peter Greens images make it very clear

I have it now. Yes, avoiding hacking away and blunting the knife is the next stage of perfection in this art. It's all those little tendons precisely severed.

Doing mostly suspended grallochs and being right handed, I personally find the back right leg the most awkward on a gambrel - it’s like I don’t know where to put my left hand.

Enjoyed the video - always done the front legs from the back in the fold, but going to try from the front across the knee cap next time- looks very neat and quick.

Glad its not just me then. I either get it spot on or its an absolute farce...nothing in between lol
