They'll use whatever a sponsor provides. 
In later films from the same series Franz-Albrecht reverts to his Sauer and other shooters use there own personal rifles from different manufacturers.
Having said that, I've found my Helix to be very fast for subsequent shots and, if you practice, cycles naturally while remaining on the shoulder and in aim.

I have a Merkel Helix in .270 and as stated you can keep on aim while cycling the next round.
