Mallards are great, and I'm getting a semi regular number from beating!
I've done the standards - pan fried, Peking, duck in orange, and stew!
Has anyone else got some recipes I can give a bash?
P.S I like to prep mine with the breast with the leg on - less faff than plucking it all but you get all the meat with the skin on!

I am getting a steady supply as well. Prepped three brace last night. I’m very interested to know what you mean by breast with the leg on.
 
Cold smoked breasts take them to another level.
Same for pheasant and partridge too.
The last batch got brined in a light salt salt solution with herbs and thai red curry paste and then smoked over cherry wood.
To be lightly pan fried shortly.
 
My god man, when you brine did you submerge them in batches with one layer at a time or all in?

Yes submerged in a big tub with a lid on that goes in the fridge.
I dissolve the salt in hot water before letting it cool then add the breasts.
Never tried eggs but you can turn the cheapest cheese into something else. Also smoked butter works well.
Have a look at ProQ smokers.
