MINCER whats wrong??

My mincer a Hobart 22 has stopped mincing and is kind of Squelching the meat through, much of the meat is simply wrapping its self around the screw, is the knife blunt or something else??? its an old machine that I always thought was bomb proof, maybe not????
 
Make sure the whole mincer is screwed up tightly and assembled the correct way around - Plane of the cross shaped cutting blade sits flat against the bit with the holes in it - apologies if I am teaching you to suck eggs - as you say they rarely have anything go wrong

Sounds like one of 2 things mate:
1. blade is not screwed in tight against the disc.
2. Blade is blunt and needs sharpening or replacing.

Probably best just to treat it to a replacement blade and disc!

Have found the same problem when trying to mince too much fat which is either warm and or wet. Now if I'm going mince a carcase I skin it and let it dry slightly for a day or so before mincing it. When added fatty pork I make sure it's as cold as possible. Or even been in the freezer for a little while. Seems to work.
 
Thanks guys, its deffinately set up properly and as tight as I can get it, from your replies im tempted to go with a combination of soft meat and blunt knife. Had a bit of an afterthought though, sometime ago the mincer broke a kind of bakalite or similar type washer that fitted over the back end of the screw where it fits into the motor , I replaced it with a similar sized metal washer, have minced a fair bit since with few problems , but could be part of my problem????

It is almost certainly the fibre washer that has disintegrated and you can get a good price for them here........ p.s. you may as well get a few blades and plates while you are at it cos they are so cheap over there,I have used them lots of times,but if you are still unsure drop me your address and i will send you a replacement washer for you to check as i have a few spares. I had the same problem and got advice from a butcher , he said to tap the locking screw with a rubber mallet(dedicated for this use) to make sure the blade and holes are flush, works a treat, I was ready to sell mine until then.
 
I have experienced this issue as well and deducted it is because venison meat is relatively soft and tender, and if you than mince some meat with sinew in it you get the 'wrapping' and 'mulching' you mentioned.
The solution is to dice your meat in approx. 1"-2" cubes as you would do anyway, and than place them on a tray and put in the freezer for approx. 30min. The meat will get very cold and partly freeze, and now will mince much better.
Obviously don't try to mince fully frozen meat as you will damage your mincer.
 
when i first read this my initial thoughts were that your trousers were too tight but reading the rest of the post i think the blade needs sharpning or tightening up you could try cooling the meat down too in the fridge or cutting into cubes

Agree, after dicing put the meat in the freezer for say 30Min. so it is very cold/partly frozen.
Mincing will now be so much easier.
 
Might sound daft but I had two roe (of similar age) hung for different lengths of time. The one hung for the least time minced perfect whereas the other done the squelching.

​Blade is sharp and all is correct with the machine.
 
After growing up in a butchers shop ive spent many an hour leaning over a mincer.....What you are actually mincing will make no difference, The fibre washer is critical so if that's missing definitely get that replaced, the washer you have used may be the wrong thickness, if this doesn't cure it then replace the blade and plate.
 
The only way it won't mince properly is if there is the slightest gap between the blade and the disc with the holes in. This allows the sinues to become entangled and blocks up the mincer causing further meat forced in to be squished into jelly. My bet is that the bush at the opposite end of the shaft is worn allowing the blade to back away from the mincing disc slightly
