I think you’d slice a salmon right enough with the green one.I would have had them but missing an oyster shuck
And a smoked salmon slicer unless that’s the green one?
You are correct about the shuck though
Left to right, 150mm, 100mm, 90mm and 75mm.
Out of interest what would you use 2nd from right for?
That is what is referred to as a Birds Beak Parer, or more correctly, a Bec d'Oiseau I am informed.
The curved blade ideal for precisely peeling and preparing veg and fruit.

FLOD are mates and fellow makers based at Portland Works, they make cool stuff with glass and plastic taken from the rivers around Sheffield
I recently saw them forming some of their recycled plastics into sheet form; obviously, knife handles are never very far from my mind
A knock on their door the very next morning, followed by a few hours cutting, shaping and finishing, and the result is what you see here, one of my 4" kitchen parers, a cool little blade with the hot rolled steel finish retained to its flats and hand applied striations along the spine
