Does anyone know if I could use 1-inch Optilock rings on a 26mm scope? Or if Optilock make rings for a 26mm scope?

Yes you can. The plastic inserts allow for this.
This information is included on the instruction sheets but was also confirmed to me by Sako when I emailed them some years ago as I too was uncertain at the time.
