Pickup to flatbed conversion

As the run on my hilly is starting to fall apart due to the usual arch rust etc, I’m contemplating on taking it off, cleaning and re painting the chassis etc, but then making a steel frame with wood planks as an flatbed. Put on plastic arches and fit a winch, also of course add a new light and license plate bar.

My big question is, I see them around, and many are wider than the cab, how wide are you allowed to make them as a corner will stick out. I was told for MOT purposes there must be no sharp edges or corners on a vehicle. Moreover, how long can I legally make it? Can I add another 40cm so it protrudes over and past the tow bar which now functions as rear bumper.

Let me know if you have answers that are factual please
 
I did one a few years ago mot was never a issue but insurance was.
The lad I made this for is still using it daily.
 

Quick jfgi showed these so can't that much of an issue.

In what way did insurance become an issue?
When I declared it as a modification they wanted an engineers report or the conversion done by a recognised company. In the end I had to do a policy through Adrian Flux who specialise in modded vehicles. My flatbed also weighed less than the original tub which made breaking in the wet exciting , in the end I got fed up having to rope every thing down and I made it drop sides.
