First time I've done this, but it sure as hell won't be the last. I've been missing out!!!
Dead simple. Remove the papery outer covering, slice the top to expose the cloves, them sprinkle with salt and a wee bit olive oil before wrapping in foil and roasting for 45 minutes or so.
I then squeezed the soft middles out, mashed them, and covered them with olive oil in a jar. I can't see this lasting too long!
