Roe Chops?

Anyone bother with chops on a Roe? Are they too small?

I usually do 2 haunches as roasting joints or split into steaks, 2 shoulders as mince or stweing steak and then the fillets, with any trim to the dog.

But I was wanting to be a bit more adventerous, so was thinking about doing chops, or a trimmed saddle? Any other suggestions.

Adam these are superb my wife says they are just like lamb chops if you want you can do barnsley chop style and have them joined back to back for a bigger meal or go the whole way and do racks with hats or leave off the hats i think thats called gaurd of honour, tescos are selling venison racks for xmas atb wayne

i tried but found it was just to little really, did a French cut rack recently from a roe that was ok but felt a little to delicate.

I did them in the end, I went with 8 chops from one side and then a trimmed rack / saddle from the other side.

I messed up by not splitting the spline down the middle, so the chops didnt have a bone around the top, just a rib off the bottom! They tasted and looked great though.

Something I will try again and made a change from the usual long loins.
