roe steaks with red wine reduction

i had a dinner party last night and starters where vennison kebabs in lime and corriander and then roe steaks medium rare with a red wine sauce.
the sauce was two shallots finely chopped fry those off when soft add a big handfull of fresh wild garlic or normal add a glass of red wine one teaspoon of dejon mustard and one tablespoon of balsamic then add some stock reduce to a thickish sauce and finally add a big dollop of butter and fold in . lovely:lol: pour over steaks and serve .
