Scottish Venison - Scone Game Fair

This weekend at the GWCT Game Fair, our small business, Perthshire Game, will be featuring in the Kitchen Theatre. We are doing two butchery and cookery demonstrations with a couple of local chefs.

The Kitchen Theatre is being sponsored by ‘Scottish Venison’, so this year we have been asked to help with putting the focus on local, sustainable wild produce.

Friday 5th July - 11.15 am - 12.30 pm
Saturday 6th July - 12.15 am - 1.30 pm


Looking forward to a good weekend, and great fun having the chance to do some demonstrations again, if you are at the game fair, please pop in past to take a look and have a chat!

Managed to see about half the demonstration with the wife, which helped her understand a bit more about the butchery as well as the “harvesting”.

You had a yellow handled knife sharpener, I forgot to ask what make it was?

It is a ‘Bobet Materiel’ Sharpener - a fish processing chap got me on to it. Essentially does the same job as a traditional steel, however has grooves to straighten the edge at the bottom of the device jaws.

Reviving this thread from last year….

We are working with Scottish Venison Association again this year at the Scottish Game Fair - and are providing a full butchery demo in the Game Fair Kitchen Theatre on Saturday 5th July, from 2pm - 3pm.

We are pairing up with a local chef, Grant MacNicol, who will take the produce straight off the butcher’s block and demonstrate some tasty venison recipes.

Always good fun these demos, and spreading the word on Venison is always easier when you have a professional chef cooking up a storm next to you!

Hope to catchup with the usual suspects at the Fair @Monarch Country Products @lochty and others!

By no means wanting to hijack this thread or take away from what Tom is offering as I am sure it will be a masterclass in butchery but.................

For anyone that is going to miss the demonstration being provided by @roaring_stag then do also pop along Gun Makers Row and find Game Larder by Tarrant Refrigeration. There will be some smaller scale demos happening right the way through the Game Fair. These will mainly be to show the Landig Kit in use (Various Knives, Mincers etc). By no means a professional butcher but happy to chat and maybe give some recommendations on various pieces of equipment.

All the best and maybe meet some new faces over the weekend.
