Many thanks for such an informative, well-written, and well-illustrated post - you must have had a lot of patience to put this together as you've done a grand job.

I have one question that I'm hoping you (or someone else on the forum) might be able to help with.

When I butcher deer I've been taught to remove the lymph node that is located between the three major muscle groups in the haunch, when I bone it out. Do you happen to know what the correct name is for this particular lymph node?

Really useful, I've done it once and it was a real trial and error effort. However, thinking about the muscle groups helped, as well as having a mincer for all of the bits I didn't get off as cleanly as I should have!
