lndeed, but my point was, why wait until after removing the pluck to split the sternum?

Surely it makes more sense to cut it then remove everything, in order to facilitate both the gralloch and the cooling?

Interesting to see the method how others do it, ive watched dozens of different methods from various different stalkers and they all have different ways, ive taken a few tips here and there to develop my own way which suits me. But on these videos im glad they are not my fingers there, cutting towards his hand, when making slits for the gambrel, then using the knife facing the wrong way under your wrist - could go very seriously wrong there..


Always cut down and away from you i was told as a youngster.

I only shoot the three small species, and my process is:

With the beast lying on the ground:

a) Bleed and hock.

b) Tunnel out & tie off anus with twine.

c) Open from groin to chin using tripe knife.

d) Split sternum using saw.

e) Lift to eye level into a tree, and let gravity assist me in removing pluck until it’s only attached at the chin.

f) Remove head, leaving “hoop to snoot” on the ground in one piece.

I’m only splitting the sternum if I am doing a full suspended gralloch and removing the pluck.

If I’m leaving the pluck in I opt for a hill style gralloch with minimal cuts and removal the pluck and rear end in the larder.

Exactly this, bleed down hill if possible, quick nip of the Crown Jewels or udder, unzip as small as possible, remove the green, leave the arse in and onto the trolley or quad amd deal with the rest back at the larder
 
Makes it look very easy. Mind you, it probably is a little easier with a good system to suspend from rather than ferreting about on the floor.

I got one of the winches that Tom8 makes as I hate doing anything with deer on the ground. Hoist them to the correct height, core the anus (please behave :lol:) winch them up, bleed as required, sort neck and chest, split chest, unzip to haunches and take the whole lot out and remove the head. Simples and minimal (if any) contamination 👍
