The perfect knife?

No - the convex grind on an F1 seems pretty robust. I have damaged mine attempting to break rabbit legs by hacking at them as you would with a cleaver - clearly this was stupid, and not something you should try. But I routinely use mine to take head and legs off and cut through breast bone, with no real loss in performance.
Great. Yup, I've been there too. Now I like to bone out and butterfly whole roe haunches, but I used to simply shorten the leg bone. I once didn't have a saw, so hammered my mora through with a log. The resulting chips in the steel took me a few hours and a rough stone to remove.
 
I tend to use a Boker integral hunter which is a little shorter than what I can find on that knife (only about 10mm though). If you are after a shorter knife then the Alan wood safari is really good at 6.8cm blade. They are made an distributed by a company called casstrom now.

Blade is much deeper than what you use though.

 
I have various knives from puma white hunter 1 and 2 through to mora. What I find with the cheaper knives is the edge rolls over easily so needs regular honing with a steel. I don't really like the puma design, too much like a chisel. I think my favourite is a brustelo but it does seem a wee bit short

Price! the mass producer works on pennies for margin . Energy costs, steel costs , employee pay etc everything cut to the bone . What does anyone expect ? But the pennies add up to lot via volume.
 
As far as mass-produced knives go, Boker fixed blades are very good quality for the price, especially the Argentinian made Arbelitos.
Fallkniven in my view are overpriced.
Maserin are good.
