A delicacy just about everywhere - except UK. An enterprising crew found their lobster and crab post full of octopus, so landed them instead and made £175k at auction to go to Europe. Trouble is the octopus eat everything they can get their tentacles on, so they are wiping out crab and lobster populations, in the seabed.
Unless the occies in the UK are a recent introduction (ie rabbit to Oz) whatever they are doing is simply part of the environment.
Its got me stuffed why the UK lot haven't found how good they can be.
Marinade we use, quantities are not strict.
Full head of garlic
three- four lemons squeezed (juice of)
Olive oil,no need for extra this or that,just o/oil even canola or sump oil they are still delish.
Oregano
And we throw in a good dose of crushed dried chilli flakes if you want to jazz up with spice.
We will have a couple of kg`s in a non reactive bucket/bowl in the fridge for 2-3 days turning them over a few times a day.
Burn half a barrow of proper
hardwood and when the coals are blue lay Occ`s onto wire mesh grill.
If you grow oregano you can throw fresh oregano leaves onto coals for the smoke infusion.
All ya need is to add some salt to taste, six pints and a nap.
Some will simmer the occ`s for an hour pre grilling,we cant wait so we dont **** around with that.
