Has anyone got any recipes for a good hot and spicy jerky marinade with ingredients readily available from UK high street shops or supermarkets please? Many videos online are American with ingredients which are not readily available locally. I have managed to buy some liquid smoke though. The jerky will be made in a dehydrator.
 
some how not all the text came up.
use the river cottage biltong recipe then add chilli flakes or Tabasco sauce to get the kick you require.
 
I use cheats jerky gun and make it out of venison mince and a dehydrator...
as said dried chilli flakes , as I’m mixing ingredients thru mince I could hot sauce etc or even a little jalapeño or diced chili’s

Looks delicious!

Does the jerky gun come with different nozzles to make the flat and round versions?

I have a dehydrator, and plenty of venison mince, so quite fancy giving it a go.
 
@Anson Deeley I make biltong with Salt, coriander seeds, black pepper, sugar and Worcester sauce. I added basic chilli flakes to a batch last week and it worked really well. Happy to send you the recipe if you don't find something else more suitable.
 
I am waiting on a 6 pack of liquid smoke from Amazon.
All the US recipes seem to call for it.

Any advice on which dehydrator to get?
Anyone used a normal oven?

Make one, a box, light bulb, computer fan and some rods to hang it from, easy and cheap

I have ordered a six tray, stainless steel one for £100. My friend has a Cabelas one with clear plastic trays, but he says it would be better with stainless trays for cleaning. I also thought if you should need to replace a tray its easier to find a bit of wire grid. When buying, check the size of the trays. Some look much bigger than they really are.

My reply was more to Pkiernan’s question, I’ve make a couple in the past and I think the oven has an option than would work.
I use stainless rods so they go in the dishwasher and hang from paperclips which are binned.
 
For the mince / cheats jerky you can use oven ....
Have it on low maybe 80 to 100c ... your jerky on wire racks and wedge door with a coke can crushed . So it’s open maybe 1” ...... do one hour ..... then turn jerky over and do another 1.5hrs & check it ... if feels ok then remove leave to come down to ambient temp
