Had a dig around in the freezer recently and came across 2 wigeon. Naturally the excitement set in.

Brined in a mix of water, salt, light brown sugar, whole peppercorns, orange crushed to let the juice and oil come out and some lemonade.

After 24hrs then washed off dried and poured a marinade on that I made out of maple syrup, garlic & onion granules, salt, pepper, light brown sugar and water. Brushed all over and left in the fridge for a few hours. When ready to smoke I stuffed some spring onion and orange halves in the cavity and smoked for a few hours with a mix of cherry and apple wood.

When ready let ready, then into tortillas with hoisin sauce, spring onion and cucumber

A fantastic and unexpected dinner

Out of interest, what smoker do you use? How do you find it?
It's a masterbuilt electric smoker similar to this

Though I got it a few years ago so probably the old version. I really like it, it's easy to use and has plenty of space. I previously had an offset smoker which to me was the "proper" smoker but it was just so time consuming to use. Where as with the electric one I was smoking things pretty much most days when I first got it. Super convenient, easy to use and doesn't take long to get up to the desired temp
