Utilising venison heart

Anyone got any additional heart recipes to add to this old thread?
I've just set aside a couple of fallow hearts because they looked too delicious to go in the gralloch pit, and now I'm wondering what should be done with them.
Wonder what they would be if minced with venison for a few burgers?
 
I used to save the hart when i first got involved in deer stalking , haven't done a Hart in a very long time 15 years or a good bit more perhaps i guess? its mostly spoiled by the bullet and there is enough to sort out when you come back with a few big beasts .
Liver i like but again there is too much to do to faff with it and it even gives the Dogs the squits also the issue of fluke in that .
So i concentrate on what keeps and easiest to use / store / sell

Not yet come across a deer with its heart between its ears 😆

Liver is a definite keeper. Delicious!

I've just sold the those hearts anyway, but keep suggestions coming 👍
 
Use it with lungs and liver to make Staggis. Rinse out the stomach and use that as a bag if you want to be truly authentic.
