I'm running a series of Venison butchery courses with Jim Riley at DGVM over the autumn and winter. These will take the same form as the courses I have run down in Essex with Dan Cockett in the past.

A one-day course where you will learn to skin and butcher a fallow deer into beautiful cuts and joints. You will work in pairs to butcher a whole fallow carcase over the course of the day and you will take home the half deer that you butchered, all vac packed and ready for your freezer. There will be two instructors each day, with a maximum of six students to ensure that that you have plenty of individual help and support. This a day of hands on butchery, learning new skills and knowledge, not just watching a demonstration.

We provide an apron and all the knives and equipment that you will need during the day. Hot drinks and chocolate biscuits are provided, so all you need to bring is your lunch. The courses start at 9 am and we aim to finish around 5pm. Cost is £220 per person. Venue is our purpose built larder and classroom at Chippenham Park near Newmarket CB7 5PU

I did this butchery class yesterday and it was excellent.
The two instructors were great in demonstrating different cuts and presentations of joints of venison. They helped out during our turn to butcher the fallow deer which was needed as when you watch it all looks so easy by the professionals.
Quite a long day but well worth it for the knowledge and skills obtained during the day. I certainly recommend this day for those interested in broadening their knowledge.
And at the end of the day I went home with half a fallow cut into different joints along with mince all vacuum packed.
