Venison Wellington

Always difficult I think to get the balance between pastry being cooked and venison being pink. Did one last night and pastry was done but so was venison …overcooked!

Id think that starting off with. High temp and dropping it after a few minutes would get around the overcooked venison issue, but would take better qualified advice than mine
 
That looks terrific! We had it for Christmas dinner last year and plan on having it again this year. Will try this recipe too!
 
I was just sorting out some haunches so got muddled, thanks for picking bring it out! Corrected now 🤣

Can't go wrong with the BBC Good Food Recipes, use them all the time myself. I tried that same recipe last Xmas with two Fallow loins. Worked a treat, but I tend to cook slightly less than the recommended time/lb, as I am always surprised how little cooking venison needs.

Must say I'm tempted to get one of those 'MEAT' Bluetooth thermometers to remove the guess work.
