Fallow shoulder diced , cooked with herbs , carrots, celery, onions and then put into a suet pudding and steamed for a couple of hours. Marvellous!

did this a couple of years ago with fallow shanks, equally good!

I cooked a Roe, Steak and Kidney (6 kidneys, from a successful morning at the end of February) Pudding a couple of years ago, and that was seriously good.

I must remember to recreate it again this winter!
 
You lot make me hungry! !
It's good that you like the venison. Lots of people I know don't eat what they shoot.
If I didn't eat what I shoot I wouldn't go shooting.
I eat pigeon, partridge, pheasant, duck etc even rabbit but not all of them. It's good meat and I would rather know where it came from than some packet.

I had venison stew with dumplings last night, dumplings made with fallow suet from last year, made a proper pig of myself, I'll be trying to get another fat fallow this year, if any one else gets fat deer try the suet you won't be disappointed
