A festival of (one) Chinese water deer in Nine dishes

Hello everyone.

There have been a few discussions of late on how to make a case for hunting or talk about it to the wider public, and as you may know I'm of the firm belief that feeding game to people is a powerful argument. And so here is a more-or-less Instagram-friendly chronicle of how this particular CWD doe disappeared from my freezer over the past four months. I may have missed the odd dish, but most of them will have made several meals, most just for the family, some shared with friends.

1. Warm salad of CWD fillets for two. One of the better weekday lunches.

2. Blanquette d'hydropote à l'ancienne, a traditional French dish that I made up.

3. Griddled steaks, peppercorn sauce, pommes frites, spinach.

4. CWD meatballs

5. Scallopine di capriolo d'acqua alla Ealinghese.

My God your family eats well!
Thanks for such lovely ideas
Thanks, I don't know if they always realise. But the point is that this isn't mostly particularly complex or flash stuff, it's adapting existing dishes to the venison, and not forcing it to try and be meats that it isn't. And it works.
