Hi everyone. Merry Christmas.
I really want to cook this special Tuscan Hare Ragu recipe:
And then eat this dish, washed down with a bottle of Amarone.
Unfortunately, I don’t have any Hares. Me and a mate would like to shoot a couple of Hares each ourselves but they are very thin on the ground in Cornwall.
Just wondered if anyone in Devon or Dorset or Somerset has enough that they would be willing to offer this as a single day trip event.
We just want to drive up there, have a walk around with a person who has Hares and head-shoot 2 each for the pot if possible. So a total of 4 hares.
We have .22lr rifles, “open tickets”, insurance, Accredited Hare Stalking witness level 7 etc. etc.
Can pay cash or a decent bottle of something or a possible swap for something down in Cornwall.

Good recipe. I was given a variation years ago by a chef. One hare will feed about 12 people and that ragu will go with much more than 250g of papardelle.
PS some variations call for you to collect the blood in the field.

How long does blood keep when collected in the field? What’s best for storage ?

A clip-type tupperware box. I suppose you'd want to be cooking with it pretty quickly. I never remembered to keep the tupperware box on me when I shot one, so all I can tell you is that it's still delicious without. Also, do it when your wife is out, it's pretty smelly (gamey) in the kitchen.

I read somewhere that Hares should be hung up for a bit. Is this correct? I guess hanging for a while and using collected blood don’t really go well together

As with all game, a matter of taste...and temperature. If an old hare, I'd certainly give it five days or more, a young one perhaps a couple of days to a week. Ambient temperature in both cases so adjust as you like.

It's an Italian recipe, I'm not sure what time of year they shoot them and I don't know if they go in for hanging meat as much as we do.
I don't eat them too often, prefer to see them alive.

Thanks. I also like to see them alive, hence my reluctance to shoot them locally with numbers being low.
I’m hoping someone with a Hare infestation will step forward soon 🤣
I have actually never shot a Hare myself but I’ve eaten a quite a few that others have shot and frozen.
 
Nobody in Dorset got any hares they want to share?
are they thin on the ground or am I just that unpopular on here?🤣
 
After reading you original post, I had to cook an hare ragu 😂. I'm from Tuscany originally, and washed it down with a nice bottle of Chianti. Sorry can't help with your request but thanks for sharing the recipe!

I must say, I am a little bit surprised that nobody offers “hare stalking” as a fridge filling operation. They are very good to eat.

I guess its where you live, I don't have many on the ground I stalk, but their numbers are slowing increasing, I don't shoot them and the farmer likes to see them.
I use them as a guide, I find that when they first emerge, it's usually 15 minutes later the deer come out, sometimes!

A friend of mine has a good few coming back on a stalking permission, and the dog men have unfortunately found them, this has resulted in the farmer asking for their removal. We are hoping to relocate them rather than shoot them as there’s so few in Cornwall generally, however if this plan is unsuccessful I’ll ask him if you can take a couple

I do hope the relocation is successful however. We definitely don’t have enough Hares in Cornwall.
To be honest, I’d be delighted with shooting just one for the recipe if it ends up as an option.

I sampled hare ragu in Italy many years ago. It was sensational. Thanks for reminding me.
 
We have an absolute abundance , we never touch them and just leave them be but have no aversion to someone shooting a few for the pot , if you ever fancy a trip to the north west and want to take a few give me a pm 👍
