Best wet/dry knife sharpening stones

Wet - genuine Arkansas stone, or the Japanese King stones.
Dry - I like the Spyderco Sharpmaker and Lansky diamond stones (both are guided sharpeners).

Don't use diamond hones dry. They'll clog too easily if dry. A little spit is all it takes, or a drop or two of water if you're pernickity ;) Wipe clean and dry regularly and then re-wet before continuing and you'll find they work far better.

Best diamond hones I have found are DMT.

Just bought some great wet stones on Amazon about £25 for a set of two stones with four grades with a block to sit them in and a honing guide (which is pretty useless as the angle changes due to width of blades differing.) Think the grades are 400, 1000, 3000 and 8000. Only thing I would say is they do seem fairly sacrificial as I can already see wear if you put two back to back but they cut really well. I have used Norton stones for years but as you dish them they are just too hard to bring back, I would rather buy these every couple of years.

There is a great YouTube channel called burrfection - these videos may be of help. Check out his other vids too - all about hand sharpening.

I was always told by a well known custom knife maker to use a pencil eraser regularly to clean DMT stones

I have one of these which is a dry stone and it is excellent.

Good deals sometimes available on it on Amazon and Ray Mears.
