Whilst butchering a fallow doe yesterday, I thought it would be an idea to keep a note of what the meat yield was, as it pops up here from time to time. Larder weight, skin on, was 29kg. It produced the following:-
Loin, 1.7 kg
Fillet 0.3 kg
Rump 2.2 kg
Silverside 2.0 kg
Topside 2.7 kg
Stew 2.7kg
Mince 6.2 kg
Total 17.8 kg or 61% of larder weight.
I might have lost a bit to bullet damage, but not a bad return overall.

Just out of curiosity….

Where was the bullet placement on the carcass, i.e. chest?

Calibre used?

Lead, ballistic tip or lead free bullet type?

That's about £365 worth.
 
I'd thought £330, but in the same ball park.
Interestingly, that's exactly the same result I arrived at based on your figure for total yield, but when I prices up all the quantities of the individual cuts it came to a bit more. So you clearly did a good job maximising the higher value cuts 👍
 
@VSS I based that on £40 for loin, £18 for haunch, £16 for stew and £14 for mince. All per kilo. Might be a bit on the conservative side though, but fair.
 
Averaging it out across all the cuts, and the proportional yield of each from a typical fallow carcass, cut up in a standard way, I find it works out about £18.50/kg, hence £330 from your 17.8kg of meat. However, that would be a minimum. Good butchery, giving a better proportion of high value cuts and less mince, will raise it.
My prices for individual cuts range from mince at about a tenner per kilo, up to loin butterfly steaks at £42.50/kg.

(Biltong I sell at £61.50/kg, but it takes 300g of meat to make 100g of Biltong).
