Whilst butchering a fallow doe yesterday, I thought it would be an idea to keep a note of what the meat yield was, as it pops up here from time to time. Larder weight, skin on, was 29kg. It produced the following:-
Loin, 1.7 kg
Fillet 0.3 kg
Rump 2.2 kg
Silverside 2.0 kg
Topside 2.7 kg
Stew 2.7kg
Mince 6.2 kg
Total 17.8 kg or 61% of larder weight.
I might have lost a bit to bullet damage, but not a bad return overall.
