No pork venison sausage recipe with easy to buy ingredients?

I don't eat pork, but cannot find a recipe for venison sausages without pork. Would you know one?
Ideally, it should be with some easy to buy and prepare ingredients. My guide told me that I can buy mixes for sausages and burgers, but I did not come across them in supermarkets, do I need to order them online only?
I plan buying Kitchenaid attachment to make sausages, I have KitchenAid mincer attachment already

Tongmaster do a great range of seasonings. Either direct or through amazon. Personally I use surplus fallow fat for sausages, but might not be to everyone's taste.

You can make fantastic venison sausages (boerewors) with Beef fat. No pork necessary. All spices and worcester sauce available in your local supermarket and beef fat from butcher or, even better, online.

I'd recommend buying a manual sausage stuffer, maybe 2-3 litre capacity.
 
86.5% venison, 4.8% rusk, 6.6% water, 2.1% Weschenfelder Royal Venison seasoning into hog casings. Approx 11 sausages/kg meat.

Wonder why would you recommend buying a manual sausage stuffer? The attachment to Kitchenaid will cost me only £35, and from my experience KitchenAid works really well. I suspect I underestimate complexities of making the sausage as I never made them before...:-|

very slow to fill the skins, yes it works but if your doing it alot, as in once every couple of months dont waste your money

No problem, boerewors is great. Let me know if you'd like a good recipe.

I found that the sausage stuffing attachments for mincers tended to not work that well, and churned the mixture up excessively.

A manual stuffer with a crank handle is effortless and fast.

And could you suggest the manual stuffer - maybe I should not be afraid buying something inexpensive, but don't know what constitutes a good quality...
 
I must be looking at some wrong products as I see that manual sausage stuffers cost way more than KitchenAid attachment ... Could you direct me to what you have in mind, please? This is what I found - £384 for a 3 litre model Manual Stainless Steel Sausage Filler
i typed sausage stuffer uk into google, no clue whats a good buy but bushwear was in the list. ive had mine years i think its a 5L but also got a 3L i got second hand. you should get a decent one for around £100 id think

How big a batch of sausages are you planning to make?
I have used a Kenwood Chef mincer/stuffer attachment in the past and it was fine to make a few kilos every now and again, I guess that the Kitchen aid wouldn't be too dissimilar, but you need to mince the diced venison mixed with seasoning (and rusk if using it), when it is virtually frozen on a coarse plate, then chill it again before stuffing.

If you can't eat pork belly you can swap for lamb breast, but don't overdo it otherwise the lamb flavour comes through too much.
Salt, pepper, rosemary, marjoram, juniper, garlic, thyme, orange etc are all available in the supermarket to make your own spice blend.

I get all my burger and sausage mixes from this company. You might find what you're looking for there.

I would think about 2-3 kg of sausages for the first time and then I will see. I would think KitchenAid is the same to Kenwood
Buying a manual sausage stuffer is about £140 from Bushwear with some extra items, I guess I will try KitchenAid first to try - if it doesn’t work, then I will return it 😀

Thanks - yes, I thought manual ones were cheaper, but apparently not . Will try KitchenAid, then e(vil)Bay if it doesn’t work
 
Why would anyone go to the effort of making their own, bespoke home made sausages and then use a pre-bought seasoning mix. You may as well just buy the sausages in the first place.

Ages ago an old forum member called woodsmoke posted that skimmed milk powder helps to retain moisture in sausages due to some magic or something. If you search the forum you'd find it I'm sure.

It works well. Add it to your seasoning mix.

I also add some cheddar cheese but with the skimmed milk powder there's no need for pork fat.

I can't tell you how much I use as I just kind of add it until it feels right in my hands. Then fry a little bit of the mixture to test for flavour and stuff it in the skins.
