It does that if it’s not dried enough, almost makes you vomitI do that with biltong (beef though, as I've never liked the taste of roe venison biltong. I don't know what it is, but it just seems to have an 'off' taste to it)
Ah. So that's what causes it. Thanks for that. I'll not bother with it again though, as I like my biltong quite 'wet'. Arrived and will be doing some with the next beast I get. Any tips on making the minced type of jerky? I assume a nice fine grind (I have an ultrafine die I use for 'Nduja, think it's 3mm) and then mix well with the seasoning....do you do dry seasonings only or add in wet still? I tried a few using the cylinder and didn't like how they looked. I think the wider strips are about perfect for meI used the narrow and they got quite hard when dry. Not particularly pleasant

The only thing I found when using the gun, is that there's a knack to getting a clean break when laying each strip of wet mixture onto the dehydrator trays. You soon pick it up though. And I just stuck with the wide strip attachment.

It works great. It has a huge capacity and you just turn it on and leave it. The only issue I've had is getting used to the metal, mesh grates. The jerky can get pretty stuck, but I've resorted to flipping the jerky a couple hours in and its fine.Not a bad Christmas present to get

Mine has similar grates and a light wipe of oil on before laying on the jerky works wonders. Going to try some of the piped jerky now so keen to see how that works.
