Venison in the freezer

All,

Hope you can help, I have had some conflicting opinions on how long venison should be stored in a freezer. It ranges from 6 months to 3 years so any advise appreciated.

It never lasts long enough to find out!!
 
What happens in the freezer is like slo mo hanging so if you butcher and freeze the venison fairly quickly and don't have fatty elements you should be fine for 2-3 years. My rule of thumb on pheasants is a year in the freezer is approximately equal to hanging for 2-3 days. I haven't had any problems with cuts of vension that have been in the freezer over two years and this was prior to me using a vacuum packer.
 
Well,I'm not sure cos I put a Roe in the freezer on Friday and when I looked on Saturday it was dead.

I'll get me coat.........
