I've spent the last few minutes wondering if I'd been harsh on Hunt n Seek with my choice of language, but on reflection I'm not sure I have. I have never been hunting moose in Finland yet, so am not qualified to discuss that, but Christian, take the following onboard and it may well help you a lot in the future :-
Some of your clients will have saved for a long time to pay for what for them will be the trip of a lifetime. It can be very difficult to undertake such a trip due to financial and family constraints. To some it will be a holiday. So to try and cram twelve people into a cabin designed for a smaller group really does show a lack of respect for your clients. Regardless of the remote location, anything other than a reasonable degree of confort will never be acceptable to people. Be honest, did you really not expect complaints when trying to cram people into such conditions? Surely you must have realised that this would really **** people off?
As for no toilet paper being avalaiable, that's just inexcusable. It again demonstrates that you simply do not care about your guests. Do you actually understand how ridiculous Hunt n Seek must look to the outside world for failing to provide this? Do you just not care at all about the accomodation the hunters live in?
On the catering front, I have actually skied in Finland in temperatures below -20c. Anything less than three hot, large meals a day would be completely unnaceptable. I think you're making life harder for yourself by offering a choice. Ensure your hunters get three decent meals a day and they'll be happy. I believe that anything less than this will always result in you looking like a poor quality outfit, if you have to increase your prices a little, do it as you will look very stupid if you cannot get basic meal and accomodations right on your trips.
Your comments about costs are to be honest, nothing but very weak excuses. It is your responsibility to ensure your guests are housed and fed correctly regardless of what you have charged them. So you only look a fool by trying to justify yourself here. Do you honestly believe hunters from the SD forum would have attended your hunt if they knew that accomodation and food was to be such a joke? It seems a little disingenuous to say the least to try and avoid your responsibilities like this, and you're not looking particularly honest and genuine either to be frank.
You really should consider the amount of damage these incidents are doing to your companies reputation. The amount of compensation on offer does seem very small, and I'd strongly recommend you reconsider the amount on offer to those who have wasted time and money on your trips. It is unlikely many will want to use your services again at the moment and as the value of a discounted hunt in the future appears far greater than the tiny amount on offer it does seem fair to me that you compensate these people properly. Again, think about the value you place on Hunt n Seeks reputation.
Best
