Beef wellington anyone ?

World's gone mad !

Our house is priviged in that we rear our own beef. Our kids don't like turkey so we have beef wellington for christmas lunch. Proably twice the the size of that.
 
one of my favourite dishes !

i'll make it for a dinner party but it's a bit of a rigmarole tbh , the mushroom duxelles to do right is a laborious process but worth it !

none of the examples shown are rare enough for me
 
I don’t like mushrooms so I did a venison wellington with black pudding instead.

Starting point was a Royal Stag loin so I had to cut it in half as it was a tad too thick!
I would say this one is pretty rare @tackb

Like me my three little boys always order their beef blue, depending upon cut. You would be amazed at how over cooked it can be!

that is not a wellington it's just the raw beef

and yes black pudding works (mcsweens is best in my opinion) but so does haggis instead of the mushroom duxelles
