Just interested in others views on the source of the best sausage casings. I had some from weschenfelder but not sure they were the best as they seemed a little thick.

Yup, it was the natural hog casings I got. I just wondered if anyone has had experience with different suppliers

Just go to your local butcher.and get some Lamb casings
off him They are smaller and cook a bit easier.
there is a company called oris who make good skins. maybe on the web.

I use natural 32-34mm hog casings from Scobies here:

Thanks MS, I'll give those a try next time. I see they also do the polystyrene trays I have been looking for.

I did read somewhere that casings are good for a couple of years in the fridge but the recommended shelf life is 6 months
