That 42 quid set will do but a steel is what you need to just dress the edge , keep hitting bone will take the tip edge off but that set is just fine and will last you along time.

Victorinox or F. Dick or other boning knife of your particular choice, steak knife of your choice;
Sharpening steel;
Secateurs or bone cutting poultry shears-type of implement to deal with softer bone/cartilege;
Handsaw for cutting through bones.

The duration of the sharpness of your knives will depend on your usage of same, knives don't stay sharp long if/when used against bone, so some means of resharpening will eventually be needed, when the edge can no longer be touched back up with the aforementioned steel.

I would buy separate knifes from butcher suppliers.
Vitrinox , 7inch boner 14inch steak, Steel and a 17.5 inch Saw + spare blades.

Google butchers suppliers.
Nisbet,
Smiths sundries,
Scobies direct,
Plus a few more.

Is there an echo in here? Sure one way to up the post counts, lol!

I started with the boning knife and saw set offered by Monarch on here, sure they will do you a deal if you ask politely.
The set is still good after 75 deer so no need to spend a fortune.
Do take the saw apart regularly though for a thorough clean.
The only other knife I use is a tripe knife when skinning

I like a 5" flexible boning knife. The one I have is an F Dick with expert handle. I have a butchers saw and as already mentioned I remove the blade and clean after every use.

Check out cutting edge services

You will find all you need and the best prices around + next day delivery

Strongly recommend their Caribou range. Much cheaper than Victorinox and equal in quality
