A fantastic opportunity to learn new skills, with lots of 1:1 tuition with instructor Chris Brooks.
We are running the course on the 19th & 20th March due to popular demand we have added two more dates - places are given on a first come first serve basis.

•Prioritising quality of training over the number of people we are training.

•Take home half a fallow deer that you have butchered and vacuum packaged yourself throughout the day.

I attended this course yesterday, prior to booking I was a bit aprehensive as I feeI can competently butcher deer to a good enough standard to give away to friends and family. Basic cuts of steak mainly , mince and dice. Well my apprehension soon disappeared as I realised there was a lot I didn’t know! To start with Dan and Chris are both extremely knowledgeable chaps, having had Chris as a lecturer on my DSC1 a few years ago I knew I would be in good hands. Dan was very welcoming and was constantly making sure every one was at ease and assisting if necessary, Chris also.
The course was more than worth its money to me, as I now know how to skin a lot quicker, prepare show stoppers such as boned and rolled loin and rolled haunches etc as opposed to just turning everything in to steaks. It was refreshing to see not just stalkers but generally interested members of the public- chefs an accountant etc. In an indirect way Dan and Chris are also educating the general public on the ethical consumption of freerange healthy wild meat, which to me is another bonus in itself. Top job chaps :british:
 
I also attended this course, and whilst I had an issue, (nothing to do with Dan or Chris I will add) the course was very good, and I learnt a lot from it, I feel it IS value for money and for anyone interested in preparing and eating there own beasts then it’s well worth doing
I will add both Dan and Chris were both superb on the day and after the event
 
Ill be interested in the Sunday one please as ive always thought i waste too much when butchering.
