Can you make sausages from frozen venison and freeze the sausages?

My wife says I shouldn’t do it because supermarket labels say you should not refreeze the meat after defrosting. However, I do not understand why, I think making sausages using frozen meat should be ok

Yes, just so long as you keep things cold. defrost just enough to mince the venison (it minces easier that way anyway. Make you sausages and refreeze immediately
 
The reason that they say not to defrost and refreeze meat is that if it get warm, then bacteria starts to multiply, then when ou defrost it again they already have a head start and may be sufficient to cause an issue...... best practice is don't, but if you do then keep everything cold as stated and do it quick.
 
Keep everything cold as you can but enough defrost to mix / mince .& you want it like sh1t sticks to a blanket for the primary bind ….

Top tip as well is when cook make sure to correct internal temp / cooled thru
( fold out instant read thermometer are good and not expensive )

From my DSC1 it was explained to me that venison is one of the few meats that can be defrosted and then re-frozen…. I’ve done this lots of times to make burgers- shoulder meat roughly cut and frozen after butchering - then minced into burgers ( with about 30% beef and 5% streaky bacon) made into patties and then refrozen…..

The advice here is good, defrost in fridge so it doesn’t get ‘warm’ it’s ’workable’ at cold temps and then back in the freezer, doesn’t give chance for bacteria to get going 👍
