You can buy a purpose built gun that is very reminiscent of a caulking gun to do that,a mate has one...he laughed when I accused him of being a lazy **** for not having to chew his jerky.
 
That looks a good idea, did you use anything to bind the mince at all or is it just mince and spices?

If I bag a deer on my first outing, I'm making some of these.
 
As above …I have a cheats jerky gun ……round nozzle or flat strips …both good ….

no binder just spices and venison mince

I do 7hrs at 70c
it’s still slightly “moist” bit chewy ….
for bacteria I add a little cure #2

i don’t think 70c is hot enough to rid of bacteria ?
