So, a few months down the line, how's everyone's cider coming along?
I was full of the best intentions of doing the job properly, but I confess that by Christmas I couldn't keep my hands of it any longer, so now the stock is being depleted at a rate of a couple of litres a day (🫣🤫).
Jolly good stuff it is too! 😋

This is the cider makers curse. You and I KNOW it will be better spring onwards but just can’t wait! And why should we! Delighted you are pleased with it.

I’ve got involved in a demijohn I had filled with this years leftovers that wouldn’t go in the carboys, it’s nice but I’m looking forward to malolactic. Less acid than last years because i politely refused a lot of cookers. It’ll be a good batch by spring.
If I can wait…

I found a 5yr old batch at my neighbours we had forgotten about (54 litres 😂) so I’m nailing that, it’s really good. Mainly made from cider apples if I remember right, smooth, nice tannins and not too acidic at all.

I’ve got 100l of last years mixed with the year before in my oak wine barrel hoping it adds some nice tannins. 2 years ago was short on tannins for my liking.

The beauty is that it represents the year that was in many ways -
Where you found your apples, How you selected them etc. nothing can really change it and you can’t really make any out of season. How wonderful.

I thought 720 litres was going to be plenty, but now my neighbour has taken his half share I'm looking at the remainder and thinking it's nowhere near enough!
When you've got it on tap it's just oh! So easy! to put another little squirt in the tankard every time you go past!!!!

For many, many years, since I was in my teens, I brewed 5 gallons of beer, to my own recipe, every week, without fail. Sometimes 10 gallons if we'd hit it a bit hard the week before.
But I always lived in the kind of places where everyone shared, and nobody had to worry about driving, so we all just drank beer most of the time. And were young, fit and healthy.
Nowadays, people don't socialise at each others homes like they used to, and everyone expects to be able to drive at the drop of a hat, and I suddenly realised that I was still brewing 5 gallons a week but only I was drinking it. All of it. Which was less than ideal. And the imposition of VAT on malt extract didn't help matters either.
So, a few years ago I kind of gradually dropped the brewing. But at the same time encouraged my wife to make plenty of wine. Which she did, with enthusiasm! Gallons and gallons of it! But she doesn't really drink. You see where this is heading?

As an aside to the above, I remember a time, 30 years ago, when an FEO came in the police helicopter to check my firearms security.
(I was living in a pretty inaccessable place at the time).
Of course, I offered him a beer, which he gratefully accepted, saying "just don't tell the lads in the chopper!"
Some years later, when I moved to my current address, the same FEO came to do the inspection. We'd just moved in, and my gun cabinets, complete with contents, were just lying on their backs in the middle of the living room floor surrounded by all our other belongings.
He didn't say a word about that, just wanted to reminisce about the time we'd shared a beer (or two) while the guys in the helicopter sat outside and waited for him.
Unfortunately he was driving on this occasion, otherwise I think it could easily have degenerated into a session.

I’m thinking you weren’t a 28inch waist in those days ??🤣

Funny thing is, I never seem to put on an ounce of weight. Always been a bit on the lean side. Can still get into trousers that I wore when I was 18.

Last of the 32 pints ,first attempt with a bottle capper, cloudy Leicestershire cider .
And it'd delicious 😋.
Don't worry Tim I've saved 4 bottles for some friends to try 😉

Left a few months in the cold, that would drop perfectly clear. See how long it takes for Tim to come over!

Interesting thread that I have just stumbled across. It's good to see so many of you fine chaps producing your own stuff. Worked for a few years in microbreweries in the Leeds area and have done a fair bit of homebrwing since moving up to Scotland. You all seem to be getting along great but if anyone ever needs any tips or advice give me a shout and I might be able to help out.20200404_201753 (1).webp20200229_000758.webp
