i have found a post from 4 years ago where I asked for advice about the fallow saddle. You had replied but I was still green.

And didn’t have the balls back then. However the stinking rutty fallow buck in my freezer needed help.

I’ve only just had the courage to do it.

Also have a look at 'All purpose curing salt' from www.sausamaking.org , this ready mixed formula is a mix of salt sodium nitrate and sodium nitrite, and an easy to use replacement for saltpetre or cure 2 in recipes, this replaces the salt and the cure.
