Damson Whiskey.

I prepared the Damson Whisky on about the 28/11/16 and it sits by the back door, every couple of days I give it a shake.
Going to try to leave it till Christmas 2017. :drool:
 
I have a glut of damsons every year and like the sound of damson whiskey. Is it just a case of "flavouring" cheap whiskey or is it a brew of its own?
 
nick a pair of err-in-doors tights
put one leg in the other
get a marrow
cut the top off and remove centre seeds/pith
add Damsons to marrow, stones removed (I have left the skin on but pricked for a sharpe taste or skinned for a smoother finish)
put marrow/Damsons in double leg of tights
fill marrow with Whiskey - (cheap **** will do)
add sugar
place removed top back on
store in cool dark place and hang (the marrow is now supported)
check periodically as the marrow softens
when you think... ** see below **
tap and drain/sieve through 'paint strainer' into bucket (stick your finger in the marrow, the tights are the first filter?)
then bottle to old grolsch bottles and again keep in dark cool place

**the key is leaving it as long as possible in the marrow
too soon wasted taste
too late, tights ruined and can't be returned**

I managed to keep six bottles for one year in cycle, boy that was some ****, it will send you selfish? as I never shared a drop

that's how I was taught to do my Damson Whiskey

Can you give a bit more info on how long is too long.

She won't be getting her tights back anyway, and it would be a shame to pull it early or late.
 
I just do the same as I do any other fruit

1 litre of whisky ( I use cheap supermarket stuff but if you want to go higher end who is to say no?)

1lb of damsons with skin pierced
100grams golden castor sugar

Put together in a decent air tight container
Shake gently every day for first week or so then leave for 6 months , just give it a swirl every time you remember ....store in cool dark cupboard .

When bottling filter it ....I use a clean tea towel ....don't fancy using wife's tights😳
Then refilled if required and bottle ......some folk put in a vanilla pod or a dash of cherry brandy in each bottle .....down to taste

Here's the knack ....if you remember try to do a bottle of whatever every month or so then you will always have one not far in coming out or ready once the drinking be is finished .
