At the risk of banging the same drum over and over, tree surgeons sometimes use a piece of kit called a Maasdam rope puller, its like a toothed ratchet winch, but uses an unlimited length of rope. It's slow but effective. YouTube has a few videos, I love mine and find it really useful for all sorts of things, maybe have a look?
I’ve got a double one way racket block with a switch on it to release it’s all in stainless steel and I can lift fallow up with one hand using food grade rope
I got them at Whitstable marine supplies and the guy will make you on stainless 7 strand wire to go on your s hooks to go over a stout branch -and heavy duty drag wires as well all in stainless. Just wait for the boss to go out and put it all in the dishwasher they come out spotless ready for the next round
They aren’t cheap but they certainly work and wear well

I have a small ratchet single block in the same material with a rubber ball to sling over a high limb to hang the main block on to get a good height it works very very well and you can use it all day long
The good thing about the tie boss is you can lower it down slowly and swing it into a sled or the car, I did try a ratchet but it just ends up in a heap on the floor
My set up is virtually identical to ejg's (above) I even think we use the same main rope ! Far cheaper than anything a shooting specialist will sell you and does the job perfectly. Weighs very little in the bag but will lift even chunky bucks with ease. Bought my pulleys from here if remember correctly Flint Hire & Supply - The UK's No.1 Theatrical Chandler but cheapo's from e-bay may well be plenty good enough.
In five years bout 80 deer, I am now on my second one
Put decent rope on the first one but found it was holding moisture when used in the rain and making my bag wet so stuck to the cra@@y poly prop on the second and its fine.
